The book Fermentar compiles the learnings of Robert Ruiz and LOV Ferments: from curing processes and the making of Kombuchas, to the distillation of alcoholic beverages.

The use of fermented products is becoming more popular both in haute cuisine and in the most homemade recipes. Despite the fact that some of the techniques described in this book are thousands of years old, it is only now that the art of what the author describes as “rotting with knowledge” is being introduced to the general public.

When carrying out the design and art direction of this project for the wonderful gastronomy publishing house Cinco Tintas, we had to deal with the challenge of creating a book that would contain a large number of technical tables while being user friendly for the general public and aesthetically sophisticated.
